Stranraer: Scotland's Official Oyster Town — And Why That Means So Much to Us

It's official. Stranraer has been formally designated as Dumfries and Galloway's Oyster Town — and here at Billow & Breeze, we couldn't be prouder to call this place home.

A Town That Wrote Its Own Comeback Story

For most of its recent history, Stranraer was known as a ferry town. When Stena Line moved its operations to Cairnryan in 2011, it left a community that needed a new identity — and a bold new direction.

What happened next is, quite simply, one of Scotland's most compelling small town success stories.

In 2017, Stranraer Development Trust launched the Stranraer Oyster Festival — a celebration of Loch Ryan's extraordinary natural treasure: Scotland's last remaining wild, native oyster fishery. That festival has grown year on year, drawing visitors from across the country and putting Stranraer firmly on the foodie map.
Now, Dumfries and Galloway Council has made it official. Stranraer is Scotland's Oyster Town.

Romano Petrucci, Chair of Stranraer Development Trust, said it best: "This is testimony to what a community can achieve when it backs an idea that might once have seemed like a dream."

The Oyster at the Heart of Everything


Loch Ryan's native oysters are something truly special. The oyster bed dates back to 1701, when King William III granted a Royal Charter to the Wallace family — and it remains the only self-sufficient wild oyster bed in Scotland. These oysters don't just feed people; they filter water, support marine ecosystems, and provide habitat for coastal wildlife.

They are, in every sense, the lifeblood of this loch.

And for us at Billow & Breeze, they are also our greatest inspiration.

Where the Oyster Town Meets Handmade Craft

We are Dawn and Aiden — a mother and son team, handmaking coastal gifts right here in Stranraer, on the banks of Loch Ryan. Every piece we create is shaped by the beauty of the world just outside our door.

Our hand-decorated Oyster Shell Trinket Dishes are made using real oyster shells from the very waters that have just earned our town its new title. Each one is individually painted and decorated by hand — no two are ever the same. From delicate floral designs to gold leaf abstracts, they are little pieces of Stranraer you can take home with you.
Alongside our shell art, we make handcrafted jewellery, wax melts, candles, aroma stones, and botanical fire starters — all inspired by the coastal landscape of south-west Scotland, and all made with care, creativity, and a deep love for this place.

We even opened our very own shop on Hanover Street in October 2025 — so if you're visiting Oyster Town, you know where to find us!

A Story That Came Full Circle

Dawn started decorating oyster shells back in the early 2000's, while living on the east coast of America. Stunning shells were readily available but Dawn never realised that waiting back home in Stranraer were stunning local oysters just waiting to be turned into special keepsakes. It turned out the perfect canvas had been on her doorstep all along.

Scotland's Finest Shells — Worth Their Weight in Gold

Loch Ryan's native oysters are widely regarded as a true Scottish delicacy, so prized that they are regularly snapped up by some of London's most exclusive restaurants. That level of demand means the shells can be wonderfully difficult for us to get our hands on for upcycling — but when we do, we know we're working with something really special. We also work with Cumbrae rock oysters, harvested from the beautiful waters off the west coast of Scotland. These have a distinctly different shape and texture to the native Loch Ryan oysters which means each variety lends itself to its own unique style of decoration. Two Scottish oysters, two distinct personalities, and both utterly beautiful to work with.

A Moment of Real Momentum

The Oyster Town designation isn't just a title — it's a signal. It says that Stranraer knows what makes it special, and it's ready to shout about it. A new waterfront water sports hub is on the way, the historic George Hotel is being regenerated, and the town has even thrown its hat into the ring for the UK Town of Culture competition.

There is so much still to come.

For us, this moment feels personal. We started Billow & Breeze because we wanted to create something meaningful — something rooted in this community, this coastline, and this loch. The oyster shell has always been at the heart of what we do, and now it's at the heart of our town's identity too.
